Triple Michelin Origin Chef Miles
Born and raised mere minutes away from his new culinary base, Foxy's, Chef Miles Pundsack-Poe spent his youngest years immersed in learning to grow food, forage, and understand ingredients decades before studying at Stratford Chefs School and stepping into acclaimed kitchens locally and around the world.
That adolescent connection to the fruits of the land sparked a lifelong curiosity that would eventually take him to Chef roles at renowned Langdon Hall and Eigensinn Farm, and eventually across borders and oceans to create elaborate meals for famous athletes, A-list celebrities and hungry billionaires.
Over the course of his career, Chef Miles has cooked in multiple Michelin-acclaimed restaurants from Napa Valley (triple Michelin starred The Restaurant At Meadowood with thrice star Chef Christopher Kostow as well as his The Charter Oak in Napa Valley), to Spain (Michelin starred Etxebarri; Echaurren in Rioja; Guggenheim Museum in Bilbao), to Montreal (Michelin-recommended Dorsia), and as Head Chef at Asia's 50 Best Restaurants and Black Pearl Restaurant Guide awarded Ensue in Shenzhen, China.
